Ingredients
- 1 onion, sliced
- olive oil
- 2 - 3 cloves garlic, chopped
- 3 1/2 cups home cooked black beans (or 2 (15 oz) cans)
- 1 - 2 chipotles en adobo, finely chopped
- 1 1/2 cups water
- 10 oz young spinach or 1 (12 oz) bunch Swiss Chard, lower stems removed leaves sliced crosswise into 1/2" strips
- salt
- 1/2 cup queso fresco
- 1/2 cup chopped green onions or thinly sliced red onion for garnish

Place the greens in a microwavable bowl, cover with plastic wrap, poke a few holes in the top and microwave on high until completely wilted, usually about 2 minutes for spinach, 3 minutes or so for the Swiss chard. Uncover the bowl and set aside. Saute the onion in a little olive oil over medium heat until very richly browned. Add garlic. Stir 1 minute, then add beans, chiles and water. Simmer 10 minutes. Add the greens, heat through and serve with garnishes.
