Ingredients
- 8 chicken thighs or 4 chicken breasts
- 1 recipe Toasty Arbol or Guajillo Chile Salsa
- 1 mango, peeled and diced (or 3 pitted peaches or nectarines)
- 1 Tbsp honey

For even cooking, I usually choose either 8 thighs or 4 breast halves, with bones and skin intact for best flavor and texture. Lay the chicken skin side up in a single layer in a baking pan. Pour the sauce over the chicken, then scatter mango over the sauce. Bake a 400*F until just cooked through, about 20-30 minutes for breasts, 30-40 minutes for thighs. Remove the chicken to a serving platter. Spoon the fat from the sauce. Add honey to the sauce and stir, mashing the fruit into the sauce. Spoon it over the chicken and serve.
