Ingredients
- 1 1/2 Tbsp vegetable oil or olive oil
- 1 1/2 cups medium grain white rice
- 1 cup bottled tomato salsa
- 1 cup chicken broth
- 1/2 tsp salt
- 1 1/2 cups frozen peas
Directions

In a saucepan over medium heat, saute the rice in oil. Stir frequently until the grains of rice turn from translucent to milky white, about 5 minutes – don’t worry if some of them brown. Scrape the rice into a rice cooker, add the remaining ingredients, except the peas and let the cooker to the rest. Microwave the peas and stir them in at the end.
