Spicy Fried Rice with Green Onions

Ingredients

  • 1 chopped garlic clove
  • 1 tsp freshly grated ginger
  • 2 tbsp vegetable oil
  • 1 tbsp sesame oil
  • 3 cups cooked basmati or jasmine
  • 5 or 6 chopped green onions
  • generous splash of dark soy sauce
  • 1 tsp sambal oelek
  • 2-3 tbsp sweet chili sauce

Directions

  1. Heat a wok until very hot, then add vegetable oil and sesame oil. Throw in ginger and garlic and stir fry for a minute, until fragrant.

  2. Toss in rice along with green onions. Add soy sauce, sambal oelek and sweet chili sauce. Stir fry for a couple of minutes until the rice is piping hot. Drizzle with a little more sesame oil to taste, then serve.
