Indian Red Bean Rajma

This recipe can be made quite successfully with almost any other pulse, try this with lentils or chickpeas. The recipe can also be served over a starch, rice or cous cous and will serve more people.

Ingredients
- 1 pound dried red beans, soaked
- 8 cups water
- 1/4 cup olive oil
- 1 large onion, chopped
- 4 cloves garlic, chopped
- 1 tablespoon minced fresh ginger
- 3 large tomatoes, diced
- 1 teaspoon ground turmeric
- 2 teaspoons salt
- 1 teaspoon garam masala
- 1/2 cup chopped fresh cilantro
Directions

Simmer the soaked red beans in the water until tender, 1 to 1 1/2 hours.

In a saute pan, heat the olive oil and saute the onion, garlic and ginger until they begin to color.

Add the diced tomatoes to the onion mixture and simmer for 5 minutes more. Add to the red beans.

Season with turmeric, salt and garam masala and continue simmering until the beans are very tender and the liquid is somewhat reduced and thickened.

Fold in the chopped fresh cilantro and serve.
