Frozen Blackberry Mousse

Ingredients

  • 2 cups blackberries, fresh or frozen
  • 1 cup whipping cream
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla

Directions

  1. Thaw blackberries.

  2. Line muffin tins with bake cups

  3. Place berries in a bowl and crush slightly, then set aside

  4. In a large bowl, combine cream, vanilla and sugar.

  5. Beat on high until soft peaks form

  6. Stir in blackberries

  7. Spoon into cups and freeze
