Mashed Potatoes

Ingredients

  • 6 pounds potatoes
  • 1 cup milk
  • 3/4 cup butter
  • 1 1/2 teaspoon salt
  • white pepper

Directions

  1. Wash and pare potatoes

  2. Heat salted water to boiling.

  3. Add potatoes and cover and cook until soft

  4. In a pot, heat milk, butter, salt and pepper

  5. Pass the potatoes through a sieve

  6. Gradually add hot milk mixture, beating with mixer, just until smooth.

  7. Do not overbeat
