Ingredients
- 3 pounds potatoes
- 1/2 cup grated Romano cheese
- 4 eggs
- 1 tablespoon chopped parsley
- 1 small onion, minced
- bread crumbs
- salt and pepper
Directions

Boil potatoes in salted water.

Peel and mash

Add egg yolks, onion, parsley, cheese, salt and pepper

Form into balls

Slightly beat egg whites with 2 tablespoons water.

Dip into egg whites

Roll in bread crumbs

Fry in hot oil
