Ingredients

  • 3 pounds potatoes
  • 1/2 cup grated Romano cheese
  • 4 eggs
  • 1 tablespoon chopped parsley
  • 1 small onion, minced
  • bread crumbs
  • salt and pepper

Directions

  1. Boil potatoes in salted water.

  2. Peel and mash

  3. Add egg yolks, onion, parsley, cheese, salt and pepper

  4. Form into balls

  5. Slightly beat egg whites with 2 tablespoons water.

  6. Dip into egg whites

  7. Roll in bread crumbs

  8. Fry in hot oil
