Gayle’s Broccoli Casserole

Ingredients

  • 2 pounds Velveeta, cut into cubes
  • 2 cans cream of mushroom soup
  • 4 bunches broccoli ( or 2 bags frozen)
  • 1 onion
  • 1 pound mushrooms
  • 1 tube Ritz crackers

Directions

  1. Combine Velveeta and soup until boiling

  2. Sautee 1 onion and mushrooms and add to the sauce

  3. Cook broccoli and place in a casserole dish

  4. Pour sauce over it and stir well

  5. Crush in 1 tube of Ritz crackers.

  6. Bake at 325 for 45 minutes to 1 hour

  7. Best when made the day before
