Madeleines

Ingredients

  • 2 large eggs
  • pinch of salt
  • 1/2 cup sugar
  • zest of a large orange
  • 1 cup flour
  • 8 tablespoons unsalted butter, melted
  • Powdered sugar

Directions

  1. Set a rack in middle of the oven

  2. Preheat to 375

  3. In a medium bowl, whisk the eggs and salt until frothy

  4. Add sugar in a stream, then add orange zest

  5. Fold in the flour, then melted butter

  6. Fill Madeleine pans 2/3 full

  7. Bake for 20 minutes

  8. Remove from pan immediately

  9. Dust with powdered sugar before serving
