Mandarin Almond Salad

Ingredients
- ALMONDS:
- 3 T sugar, divided
- 1/2 c. slivered almonds
- __________
- DRESSING:
- 1/4 c. olive oil
- 2 T balsamic vinegar
- 1 T sugar
- 1 T minced fresh parsley
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. hot pepper sauce
- ________________
- SALAD:
- 1 bag leaf lettuce
- 1 can (11 oz) drained mandarin oranges
- 1 small red onion
Directions

ALMONDS: Melt sugar over low heat and add almonds. Pour on aluminum foil after all the almonds are coverd. Break apart and set aside.

DRESSING: Mix ingredients for the dressing. Set aside.

SALAD. Add the mandarin oranges, almonds, and sliced onion to lettuce and drizzle with dressing!
