Mandarin Almond Salad

Ingredients

  • ALMONDS:
  • 3 T sugar, divided
  • 1/2 c. slivered almonds
  • __________
  • DRESSING:
  • 1/4 c. olive oil
  • 2 T balsamic vinegar
  • 1 T sugar
  • 1 T minced fresh parsley
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. hot pepper sauce
  • ________________
  • SALAD:
  • 1 bag leaf lettuce
  • 1 can (11 oz) drained mandarin oranges
  • 1 small red onion

Directions

  1. ALMONDS: Melt sugar over low heat and add almonds. Pour on aluminum foil after all the almonds are coverd. Break apart and set aside.

  2. DRESSING: Mix ingredients for the dressing. Set aside.

  3. SALAD. Add the mandarin oranges, almonds, and sliced onion to lettuce and drizzle with dressing!
