Lentil Soup

Ingredients

  • 1-2 carrots
  • 1-2 ribs celery or 1/2 a celariac
  • 1 med onion
  • 1-2 cloves garlic
  • 2 cans or 1 quart whole tomatoes
  • 6 cups water
  • 1 1/2 cup lentils
  • baking soda
  • salt to taste
  • dried astragulus root (optional)

Directions

  1. Saute first four ingredients in lots of olive oil until tender. Then add tomatoes and mush/cut them up a bit in the pot, water and lentils. Bring to a boil. Then wet the tines of a fork, dip it in baking soda and mix in soup (takes out any acidity from thetomatoes). Dried astragulus root can be added for winter time immune boosting (remove before it falls apart). Simmer for an hour or two and salt to taste once it has reduced.
