Greek Green Beans

Ingredients

  • Green beans (fresh or frozen)
  • 1 sliced onion
  • Potatoes cut into pieces
  • 16 oz. whole or diced tomatoes
  • bouillon cubes to taste
  • salt and pepper

Directions

  1. Remove strings from fresh beans and wash

  2. Cut onions into slices and brown slightly in oil in a heavy pot

  3. Add potatoes and brown slightly

  4. Add beans

  5. Fill up pot 1/2 way with water (bouillon added)

  6. Simmer for about 1/2 hour to an hour.

  7. Add canned tomatoes

  8. When almost done, add salt and pepper

  9. Continue to cook an additional hour or until tender.

  10. Can also be made in a pressure cooker for about 20 minutes
