Ingredients
- 3 bay leaves
- 4 carrots
- 4 stalks celery
- 1 large onion
- 2 T olive oil
- 2 sprigs thyme
- 4 qts chicken stock
- chicken from 1 large rotisserie
- salt and pepper
- 6 c of egg noodles
Directions

with the 2 T of oil, (with the bay leaves & thyme) saute’ the onion, celery and carrot until the onions are almost clear (not caramelized)

add in stock and chicken and s&p. once that’s hot, add in noodles…
