JG’s Chicken Noodle Soup

Ingredients

  • 3 bay leaves
  • 4 carrots
  • 4 stalks celery
  • 1 large onion
  • 2 T olive oil
  • 2 sprigs thyme
  • 4 qts chicken stock
  • chicken from 1 large rotisserie
  • salt and pepper
  • 6 c of egg noodles

Directions

  1. with the 2 T of oil, (with the bay leaves & thyme) saute’ the onion, celery and carrot until the onions are almost clear (not caramelized)

  2. add in stock and chicken and s&p. once that’s hot, add in noodles…
