Fried Cheese Puffs

Ingredients

  • 3 eggs, separated
  • 10 ounces cheddar cheese, shredded
  • 1 tablespoon flour
  • 1/4 teaspoon salt
  • 1 tablespoon water
  • a pinch of Cayenne
  • 1/2 cup cracker meal
  • vegetable oil

Directions

  1. Beat egg whites until stiff

  2. Combine cheese, flour and spices

  3. Beat in egg whites on low speed

  4. Beat egg yolks and water just until blended

  5. Place cracker meal on waxed paper

  6. Drop by tablespoons onto cracker meal

  7. Roll to form a ball, using spoon to turn.

  8. Coat with egg yolk mixture and again with cracker meal.

  9. Transfer to cookie sheet

  10. Refrigerate for 2 hours

  11. oil to 375. Drop in balls one at a time

  12. Fry until golden brown
