Ingredients
- 4.5 cups oats (run through the blender to make flour)
- 4.5 cups whole wheat pastry flour
- 3 tbsp baking soda
- 2 tbsp baking powder
- 1 tbsp salt
- 16 tbsp buttermilk powder (you can get this by the powdered and canned milk at the grocery store)
- 1 cup sugar
- 1.25 cups finely chopped almonds
- 1.25 cups finely chopped pecans

Put all this in a big container with a lid, and whisk around a bunch, until blended.

make pancakes, measure out 2 cups mix. Crack one egg into 1.25 cups water and mix. Melt 4 tbsp butter. Add water, egg and butter to dry mix. Stir with whisk. Cook on a hot buttered griddle or pan. The batter is pretty thin; if you like it thicker just add a bit more mix.
