Ingredients

• 2 1/2 c flour-sifted
• 1 t baking soda
• 1 t cream of tartar
• 1/4 t salt
• 1 c butter, soft
• 1/2 t lemon extract
• 2 c sugar
• 3 egg yolks
• extra sugar

Directions

1. oven: 350

2. sift all dry ingredients together.

3. cream butter, vanilla, lemon in mixer bowl. add 2 c sugar and beat until fluffy. beat in eggs, 1 yolk at a time. add flower mixture gradualy, betaing well. shape into 1 in. balls. place 2 in. apart on a cookie sheet. flatten with the bottom of a glass that’s been dipped in sugar.

4. 10 minutes

5. cool on sheet, then on rack.

6. makes 3 dozen
