Chocolate Spice Cupcakes For Two

Be sure to microwave in silicone cupcake liners – paper liners won’t hold their shape and foil liners are not microwave safe.

Cook time: 2 minutes
Serves 2 people

Ingredients

  • 2 T flour
  • 2 T brown sugar
  • 4-1/2 t unsweetened cocoa powder
  • 1/8 t cinnamon
  • 1/8 t nutmeg
  • 1/8 t allspice
  • 1/8 t ginger
  • 4-1/2 t milk
  • 1-1/2 T unsalted butter, melted
  • 1/2 egg, lightly whipped
  • prepared whipped cream

Directions

  1. Whisk flour, brown sugar, cocoa powder, cinnamon, nutmeg, allspice, and ginger in small bowl.

  2. Mix in milk, butter, and egg.

  3. Divide evenly between two cupcake liners.

  4. Microwave on Medium for one minute.

  5. Microwave again on med for 30 sec. If the cupcakes do not bounce back when lightly touched, repeat this step.

  6. Top with whipped cream and sprinkles.
