Ingredients
- 2 tablespoons cardamom pods
- One 3" piece cinnamon stick
- 1 tablespoon black peppercorns
- 1 tablespoon whole cloves
- 1 tablespoon coriander seeds
- 1 teaspoon cumin seeds
- 1/4 teaspoon nutmeg

Break open the cardamom pods and remove the seeds. Save the seeds and discard the pods.

Heat a heavy skillet over high heat; add all the ingredients, except the nutmeg, and dry roast until the seeds darken and become fragrant, being careful that they don’t burn. Allow the roasted spices to cool completely and then place them, along with the nutmeg, in a spice mill or coffee grinder and process to a fine powder.

Store the mixture in an airtight container in a cool, dry place for up to 4 months.
