Ingredients
- 4 1/2 cups flour
- 1 teaspoon soda water
- 1 teaspoon cream of tartar
- 1 teaspoon salt
- 1 cup butter, softened
- 1 cup powdered sugar
- 1 cup granulated sugar
- 2 eggs
- 1 cup oil
- 1 teaspoon lemon extract
- 1 teaspoon grated lemon peel
Directions

Combine flour, soda, cream of tartar and salt and set aside.

In large bowl, cream butter and sugar

Beat in eggs one at a time.

Beat until well blended.

Add oil and lemon.

Add dry ingredients gradually

Beat until well blended

Wrap and chill for several hours.

Preheat oven to 325.

Divide dough into thirds, keeping 2/3 refrigerated.

Roll 1 teaspoonful of dough into a ball.

Press with the bottom of a glass dipped in granulated sugar.

Bake 8-10 minutes

Let stand 2-3 minutes before removing from pan
