Chicken and Rice Casserole

Serves 4 people

Ingredients

  • 4 - 6 Bone-In Chicken Breast halves
  • 1 cup rice, uncooked
  • 1 can cream of chicken soup, undiluted
  • 1 can cream of celery soup, undiluted
  • 1 cup mayonaise
  • 1 can french style green beans, drained
  • Topping:
  • 1/4 cup butter, melted
  • 1 sleeve ritz crackers, crushed
  • 1-2 cups cheddar cheese, shredded

Directions

  1. Cook the chicken in lightly salted water.

  2. Reserve broth.

  3. Debone and Cut up chicken.

  4. Cook rice in chicken broth.

  5. In large bowl, mix together soups, mayo, green beans, chicken and rice.

  6. Mix well and pour into a greased 9×13 glass casserole dish.

  7. Bake at 350 for 30 minutes.

  8. Sprinkle with topping and bake 10 minutes more.
