Potato and Pepper Frittata

Cook time: 25 minutes
Serves 6 people

Ingredients

  • 6 slices bacon, chopped
  • 1 cup shredded potatoes
  • 1/4 cup chopped onion
  • 6 eggs, beaten
  • 1 cup Mexican style finely shredded cheese
  • 6 green pepper rings

Directions

  1. Heat oven to 350

  2. Cook bacon in medium ovenproof nonstick stillet 4 min.; drain, reserving bacon in skillet. Add potatoes and onions; cook 7 minutes, stirring frequently.

  3. Stir in eggs; top with cheese and peppers. Cover.

  4. Bake 20 -25 minuest or until center is set.
