Ingredients

• 4 C. cookie mix
• 1 egg
• 1 T. grated lemon rind
• 1 T. lemon juice
• sugar

Directions

1. Preheat oven to 350 deg. Grease cookie sheets.

2. In large bowl, mix together all ingredients except sugar. Divide dough in half. Shape each half into a roll about 1 1/2" in diameter. Wrap and chill 1 hour or until dough is easy to handle.

3. Cut rolls into 1/8" slices. Place 1" apart on prepared cookie sheet. Sprinkle with sugar.

4. Bake for about 8 minutes. Do not brown. Cool on wire rack. Makes about 48 cookies.
