Chopped Salad With Apples, Bacon, and Turkey

Ingredients

  • 1 cup crumbled blue cheese, room temperture
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons cider vinegar
  • salt
  • pepper
  • 8 slices bacon, chopped
  • 2 romaine lettuce hearts, chopped
  • 2 apples, cored and cut into 1/2-inch cubes
  • 8 ounces thick-cut deli smoked turkey breast, cut into 1/2-inch pieces

Directions

  1. Whisk 1/2 cup cheese, oil, vinegar, 1/4 teaspoon salt and 1/2 teaspoon pepper in a big bowl until smooth and creamy.

  2. Cook bacon in a large nonstick skillet over med-high heat until crisp, about 5 minutes.

  3. Transfer to paper towel-lined plate.

  4. Add lettuce, apple, turkey, bacon, and remaining cheese to bowl with dressing and toss to combine; season with salt and pepper; serve.
