Chunky Chocolate Orange Muffins

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup sour cream
  • 2 oranges, zest of
  • 1/2 cup orange juice
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3 (1 ounce) semi-sweet chocolate baking squares, chopped (or 1/2 cup semi-sweet chocolate chips)
  • (1 ounce) semi-sweet chocolate baking square, melted

Directions

  1. Preheat oven to 400° and grease muffin tin.

  2. In a mixing bowl, combine the butter and sugar; cream until light and fluffy (I use an electric mixer).

  3. Add in eggs one at a time; beat well after each addition.

  4. Add in sour cream, orange zest, and orange juice; combine well.

  5. In another mixing bowl, combine the flour, baking powder, baking soda, and chopped chocolate.

  6. Add to creamed mixture; stir gently just until blended.

  7. Spoon batter into muffin tin, filling 3/4 full.

  8. Bake for 18-22 minutes or until top springs back when lightly touched.

  9. Set aside to cool.

  10. Drizzle with melted chocolate.
