Ingredients
- 2 stick and 2 tablespoons unsalted butter, cut into 1" pieces
- 2 tablespoons parsley
- 4 large shallots, peeled and boiled
- 4 large tomatoes, peeled, seeded and quartered
- 3 tablespoons tomato paste
- 3 tablespoons chopped chives
- 2 teaspoons sugar
- 1 teaspoon dry mustard
- 1 teaspoon basil
- 1 teaspoon oregano
- 1 1/2 teaspoons salt and pepper
Directions

In food processor, mince the parsley and reserve.

Mince shallots and garlic

Add tomatoes and chop coarsely

Transfer mix to 1 quart saucepan and add tomato paste, sugar, mustard, basil, oregano, salt and pepper.

Cook over high hight 8-10 minutes.

Bring to a boil reduce heat and continue to simmer, stirring often
