Herb Tomato Butter Sauce

Ingredients

  • 2 stick and 2 tablespoons unsalted butter, cut into 1" pieces
  • 2 tablespoons parsley
  • 4 large shallots, peeled and boiled
  • 4 large tomatoes, peeled, seeded and quartered
  • 3 tablespoons tomato paste
  • 3 tablespoons chopped chives
  • 2 teaspoons sugar
  • 1 teaspoon dry mustard
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 1/2 teaspoons salt and pepper

Directions

  1. In food processor, mince the parsley and reserve.

  2. Mince shallots and garlic

  3. Add tomatoes and chop coarsely

  4. Transfer mix to 1 quart saucepan and add tomato paste, sugar, mustard, basil, oregano, salt and pepper.

  5. Cook over high hight 8-10 minutes.

  6. Bring to a boil reduce heat and continue to simmer, stirring often
