French Pineapple Pie

Ingredients

  • 1 pound vanilla wafer cookies, finely ground
  • 1 pint whipping cream
  • 16 oz. crushed pineapple, drained
  • 1 cup maraschino cherries, finely chopped
  • 1 cup chopped pecans
  • 1/2 cup butter
  • 2 cups powdered sugar
  • 4 eggs

Directions

  1. Line a 10 × 14 pan with half of the vanilla wafer crumbs

  2. Cream the butter and sugar and add eggs, one at a time

  3. Beat until smooth

  4. Spread carefully over the crumbs

  5. Whip the cream and fold in the pineapple, cherries and pecans.

  6. Spread over the butter mixture.

  7. Top with remaining wafer crumbs

  8. Chill for 14 hours in coldest part of refrigerator.
