Ingredients
- 2 8 ounce packages manicotti
- 2 cups ricotta cheese
- 4 cups cottage cheese
- 8 ounces cream cheese
- 1 cup freshly grated Parmesan cheese
- 3 cups mozzarella cheese, shredded
- 2 tablespoons dried parsley flakes
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 3 to 4 cups spaghetti sauce
- 2 baking dishes and foil
Directions

Do not cook manicotti.

Combine all ingredients except manicotti and spaghetti sauce.

Grease foil baking pan(s).

Cover bottom of pan with some spaghetti sauce.

Place cheese mixture in a plastic zip style bag and zip closed.

Cut a small hole in one corner of the bag and squeeze filling into each manicotti shell.

Arrange manicotti on spaghetti sauce in pan.

Pour remaining spaghetti sauce on top.

Cover with heavy duty foil and freeze.

To cook: either thaw and bake at 350 degrees for 30 minutes or bake from frozen state 60 to 90 minutes covered.

During the last 5 minutes of baking time remove the foil and top with a little bit of parmesan and mozzarella.

Let stand 10 minutes and enjoy
