Shortcake Recipe

1/2 recipe yields 8 shortcakes.

Ingredients

  • 3 cups all purpose flour
  • 2/3 cup sugar
  • 1 T. baking powder
  • 1 tsp. salt
  • 2 cups heavy cream
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 2 T. unsalted butter, melted
  • Coarse sugar for sprinkling on top

Directions

  1. Sift flour, sugar, baking powder, and salt together in a large bowl.

  2. Whisk cream, eggs and vanilla together in a small bowl. Add wet ingredients to bowl of dry ingredients and stir lightly with a wooden spoon (take care not to over mix- Just stir to combine). Scoop dough to fill cupcake pan lined with papers about 2/3 full. Brush melted butter on top and sprinkle with sugar.

  3. Bake at 350 degrees for 20 minutes. Tops will be light golden and a toothpick inserted in the center of the shortcake will come out clean. Remove slightly cooled shortcake from paper and cut the top off. Place bottoms on a plater, spoon on whipped cream, fresh fruit, and then replace top.

  4. Whipped Cream;

  5. 1 1/2 cup heavy cream, cold

  6. 2 T. powdered sugar

  7. 1/4 tsp. vanilla extract

  8. Using a whisk, whip all ingredients in a bowl until soft peaks form when the whisk is lifted out of the bowl. (Whisk in a 1-2 T. of your favorite liquor to whippted cream like Grand Marnier, Chambord, Cassis, tec.) Use your creativity and taste buds to guide your own shortcake recipe.
