Chocolate Panna Cotta

  1. Place 1/4 cup warm water in a large bowl and mix with 3 tsp. powdered gelatin.

  2. Set aside for 5 minutes.

  3. Put 3 1/4 cups heavy cream, 3/4 cup Confectioners’ sugar, 1 cup chopped dark chocolate and 1 T. dark rum in a saucepan over medium heat.

  4. Kahlua, brandy, or amaretto can be substituted for the rum. Bring to a simmer and stir 4-5 minutes. Add gelatin mixture to cream and stir for another 4-5 minutes until gelatin melts. Pour into 4-oz. cups and chill 4-6 hours.

  5. Serve with whipped cream and berries.
