Silky Sesame Cucumbers

  1. Cut 1 English cucumber into very thin slices.

  2. Toss cucumber with 1 tsp. kosher salt; let stand 15 minutes.

  3. Drain; firmly squeeze dry, and place in a bowl.

  4. Drizzle with 2 T. seasoned rice vinegar and 3/4 tsp. dark sesame oil; toss well.

  5. Stir in 2 tsp. toasted sesame seeds.
