Ingredients
- 1/2 cup McCormick;s Sorrento lemon vodka
- 3/4 cup butter, softened to room temperature
- 2 tsp. lemon extract
- Zest of 2 lemons
- Juice of 1 lemon (approx. 2 T)
- 1 cup Confectioners' sugar, sifted
- 3/4 cup gradulated sugar
- 4 drops yellow food coloring
- 2 1/2 cups flour
- Pinch of salt
- 2 T. cornstarch
- 3-4 oz. finely chopped candied lemon peel
- 1/4 cup dried cranberries, finely chopped

Preheat oven to 350 degrees.

In a small sauce pan, reduce vodka to 1/4 cup by cooking over high heat 8 minutes. Set aside to cool to room temperature.

Beat butter, extract, zest, juice, both sugars and food coloring for 2 minutes on medium high speed. Mix in 2 T. of the vodka reduction until well combined. Stir in remaining ingredients until well combined.

Make cookies by taking a T. of the dough, rolling it into a ball, then rolling it between your hands to creat a short cigar. Twist into an “S” shape on a greased cookie sheet. Place cookies one inch apart. Bake for 11 minutes. Cool on cookie sheet 1 minute, then remove to wax paper to cool completely.

For the glaze, sift 1 1/2 cups powdered sugar into a bowl. Add 2 drops of yellow food coloring, juice of 1 lemon and remaining 2 T. of vodka reduction. Combine to runny consistency. Pour in a small shallow bowl. Dip the front of the cookies and place on wax paper to dry.
