Sticky Pecan Coconut Bars

Ingredients

  • Crust
  • 2/3 cup powdered sugar
  • 2 cups unbleached all- purpose flour
  • 1/2 lb unsalted butter, at room temperature cut into 1/2-inch cubes
  • 1/2 tsp. salt
  • Filling
  • 5 oz. (10 T.) unsalted butter, melted
  • 1/2 cup honey
  • 2 1/2 T. heavy cream
  • 1/2 cup dark brown sugar
  • 1/2 cup sweetened shredded coconut
  • 3 cups pecan pieces, toasted
  • (350 degrees for 10-15 minutes or until lightly brown)

Directions

  1. Preheat oven to 350 degrees.

  2. Fro Crust:

  3. In athe bowl of a food processor, combine powdered sugar, flour and salt. Process for a few seconds. Add butter and pulse just until lmixture resembles coarse meal. (Do not overprocess).

  4. Transfer the crumbles to a 13×9 greased pan and press evenly. Bake in the middle of the oven at 350 degrees until the dough is set, 18-20 minutes, depending on the temperature of the oven. Remove and set aside.

  5. For the Filling:

  6. Combine ingredients listed and mix well. Spread mixture over warm crust. Return to oven for an additional 20-25 minutes, depending on oven temperature. Cool and cut into 6×6 bars.
