Country Meatloaf

Ingredients

  • 1 1/2 lbs ground beef
  • 1 cup herb-flavored seasoned stuffing mix
  • 1 (10 3/4 ounce) can cream of mushroom soup, divided
  • 1 egg, beaten
  • 1/2 onion, chopped
  • 2 tablespoons sour cream

Directions

  1. In a bowl, combine the ground beef, stuffing mix, half the soup, egg, and onion; spread mixture in a 9×5 inch loaf pan.

  2. Bake at 400° for 35 minutes.

  3. Mix remaining soup with sour cream.

  4. Spread over meatloaf; bake for 5-10 more minutes.
