Applesauce muffins

Ingredients

  • 2 cups cheerios cereal
  • 1 1/4 cus all-purpose flour
  • 1/2 cup packed brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 cup applesauce
  • 1/3 cup skim milk
  • 2 tbs vegetable oil
  • 1 egg
  • 1/2 cup raisins (optional)
  • 3/4 tsp baking soda

Directions

  1. Heat oven to 400 F.

  2. Spray bottoms of 12 regular sized muffin cups with cooking spray

  3. Crush cereal.

  4. In large bowl, stir together cereal, flour, brown sugar, cinnamon, baking powder, and baking soda.

  5. Stir in remaining ingredients just until moistened.

  6. Divide batter evenly among muffin cups.

  7. Bake 18-22 minutes or until golden brown.
