Crab Quiche

Ingredients

  • 1/2 cup mayonnaise
  • 2 tablespoons all-purpose flour
  • 2 eggs, beaten
  • 1/2 cup milk
  • 12 -16 ounces lump crabmeat, flaked and picked over
  • 1/3 cup chopped green onion
  • 1 tablespoon chopped parsley
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups shredded swiss cheese
  • 1 unbaked 9-inch pie shell

Directions

  1. In a large bowl, mix together mayonnaise, flour, eggs and milk.

  2. Add next 6 ingredients and mix well.

  3. Spoon into the pastry shell.

  4. Bake at 350 degrees for 1 hour or until tests done.

  5. Let stand 10 minutes before serving.
