Black Bean and Rice

Serves 4 people

Ingredients

  • 2 T. vegetab;e oil
  • 1 onion, chopped
  • 2 bell peppers, chopped
  • 1 tsp. chili powder
  • Salt and pepper
  • 1/2 cup long grain white rice
  • 1 (14 oz.) can black beans, drained and rinsed
  • 1 1/4 cup water

Directions

  1. Heat oil over medium-high. Add onion and peppers. Saute until soft 6-7 minutes. Stir in chili powder andseason with salt and pepper.

  2. Stir in rice, add beans, and cover with water. Boil.

  3. Cover; simmer 12-15 minutes.

  4. Remove from heat; let stand 5 minutes, covered

  5. Fluff, serve with sour cream and green onion, if desired.
