Ingredients
- 2 T. vegetab;e oil
- 1 onion, chopped
- 2 bell peppers, chopped
- 1 tsp. chili powder
- Salt and pepper
- 1/2 cup long grain white rice
- 1 (14 oz.) can black beans, drained and rinsed
- 1 1/4 cup water
Directions

Heat oil over medium-high. Add onion and peppers. Saute until soft 6-7 minutes. Stir in chili powder andseason with salt and pepper.

Stir in rice, add beans, and cover with water. Boil.

Cover; simmer 12-15 minutes.

Remove from heat; let stand 5 minutes, covered

Fluff, serve with sour cream and green onion, if desired.
