Dark Chocolate Pudding

Ingredients

  • 2 c milk
  • 1 t finely grated orange zest
  • 1 oz dark chocolate, 60-70% cocoa
  • 1/2 c unsweetened cocoa powder
  • 1/2 c sugar
  • 1/4 t salt
  • 1/4 c cornstarch dissolved in 1/4 c milk or water
  • 1/4 t almond extract
  • 5 T cold cream

Directions

  1. WArm half the milk with orange zest and dark chocolate in saucepan over low heat.

  2. Combine cocoa, sugar and salt in bowl.

  3. Stir in 1/3 c water to make a smooth paste.

  4. Whisk paste into the warm milk.

  5. Mix the cornstarch with the remaining milk, then add to saucepan.

  6. Raise heat to medium-high and cook, stirring contantly, until mixture thickens.

  7. Then lower the head and cook, stirring a few more min.

  8. Remove from the heat and immediately stir in almond extract.
