Souffleed Pancake

Ingredients

  • Pancakes:
  • 2 T butter
  • 3 T sugar
  • 3 eggs
  • 3/4 c milk
  • 1/2 t vanilla
  • 1/4 t salt
  • 1/2 c all-purpose flour
  • Apples:
  • 2 T butter
  • 2 T white or light brown sugar
  • 2 tart apples, peeled, cored and thinyl sliced
  • 2 T whiskey or burbon

Directions

  1. eheat oven to 425.

  2. Melt butter in a 10-inch cast-iron skillet, brushing once around the sides.

  3. Mix melted butter and rest of pancake ingredients and let rest while oven heats.

  4. Melt apple butter in same skillet, sprinkle sugar and add apples.

  5. Cook over high heat, flipping until carmelized after several min.

  6. Lower heat once apples begin turning color, turning frequently until richly carmelized.

  7. Raise heat and add whiskey, tilting pan so it flames and burns off.

  8. Pour batter over apples and bake until golden brown and puffed, 20-30 min.
