Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1 can crushed pineapple, lightly drained
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 2 cups grated carrots
- 1 cup chopped walnuts
- 4 eggs
- 2 cups sugar
- 1 1/4 cups oil
- 1/2 cup coconut
Directions

Sift together the dry ingredients, except sugar

Prepare carrots, pineapple and nuts

Grease and flour 3 9" round cake pans or a 9 × 13 pan
- Preheat oven to 350

Beat eggs lightly and add sugar and pineapple and mix well.

Stir in the walnuts and coconut

Spread evenly in pans

Bake for 40-45 minutes or until sides shrink slightly and top springs back when touched.

Cool layers in pans for 10 minutes, then turn out on wire racks to cool completely
