Pineapple Upside Down Cake

Ingredients

  • 1 box Pineapple Supreme Deluxe Cake mix
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 can pineapple slices or chunks
  • 2 eggs
  • maraschino cherries
  • whipped cream

Directions

  1. Melt butter in a 9 × 13 pan

  2. Sprinkle brown sugar evenly in pan

  3. Drain pineapple and save the syrup

  4. Arrange pineapple in the sugar mixture and also arrange maraschino cherry halves, rounded side down in the sugar mixture

  5. Add enough water to pineapple syrup to make 1 1/3 cups liquid.

  6. Add this and 2 eggs to cake mix and mix as directed on the label

  7. Pour batter over fruit

  8. Bake in 350 degree preheated oven for about 50 minutes, until cake pulls away from side of pan

  9. Let stand for 5 minutes for topping to begin to set

  10. Turn upside down onto a large platter or cookie sheet.

  11. Serve with ice cream
