No-Knead Yeast Donuts

Ingredients

  • 1 cup warm water 105-115 degrees
  • 2 packages active dry yeast
  • 4 1/2 cups flour
  • 1/2 cup sugar
  • 3 eggs
  • 1 teaspoon salt
  • 2 teaspoons lemon rind, grated

Directions

  1. Mix warm water with dry yeast and let stand for 5 minutes.

  2. Stir in 1 cup of flour

  3. Cover and let stand for 30 minutes in a warm place

  4. Beat butter until soft. Gradually add sugar and beat until fluffy

  5. Add eggs 1 at a time, mixing completely after each addition.

  6. Add salt and lemon rind

  7. Sift the remaining flour and gradually beat in.

  8. After all the flour is combined, beat for 5 more minutes. Place in large greased bowl.Cover and let rise in a warm place about 2 hours.

  9. Punch down on floured board and roll to 1/2" thick

  10. Cut with donut cutter.

  11. Allow to rise uncovered for 30 minutes

  12. y in deep fat at 375.

  13. Turn and brown the other side

  14. (about 2 minutes on each side)
