Ingredients
- 1 cup unsifted cocoa
- 2 cups boiling water
- 2 2/3 cups flour, sifted
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup butter, softened
- 2 1/2 cups sugar
- 4 eggs
- 1 1/2 teaspoon vanilla
- FILLING
- 1 cup chilled heavy cream
- 1/4 cup powdered sugar, unsifted
- 1 teaspoon vanilla
- FROSTING
- 6 oz semi-sweet chocolate chips
- 1/2 cup light cream
- 1 cup butter
- 2 1/2 cups powdered sugar, unsifted
Directions

Combine cocoa with water, mixing with wire whisk until smooth

Let cool completely

Sift flour with soda, salt and baking powder

Preheat oven to 350

Grease and flour 3 pans

In large mixing bowl, on high speed, beat 1 cup granulated sugar, eggs and vanilla for about 5 minutes at low speed.

Beat in flour mixture in fourths, alternating with cocoa mixture in thirds, beginning and ending with flour

Do not overbeat

Pour into pans and bake 25-30 minutes.

Cool for 10 minutes, then remove and cool on wire racks

Make the frosting.

In a medium saucepan, combine chocolate pieces and butter, stirring over medium heat until smooth.

Remove from heat

With wire whisk, blend in 2 1/2 cups sugar

In a bowl set over ice, beat until it holds its shape

Prepare the filling

Whip cream with sugar and vanilla and refrigerate

Fill the layers and frost

Refrigerate at least 1 hour before serving

To cut use a sharp thin bladed knife, slicing with a sawing motion
