Sorrento Cassata Cake

Ingredients

  • Deluxe cake mix
  • 3 large eggs
  • 2 1/2 cups whole milk ricotta cheese
  • 1 cup confetioner's sugar
  • 1 tablespoon rum or brandy
  • 4 ounces chocolate, finely chopped
  • 1/2 cup maraschino cherries, drained and chopped
  • 1/3 cup seedless raspberry jam
  • 1/4 cup granulated sugar
  • 2 tablespoons rum or brandy
  • 2 cups heavy cream
  • 1/2 cup confectioner's sugar

Directions

  1. Make cake in 2 9 inch pans following directions, but substitute 3 large eggs for the egg whites.

  2. Mix sugar, chocolate and cherries into the ricotta cheese with spatula and fold in the rum

  3. Make syrup with 1/4 cup granulated sugar dissolved in 1/4 cup boiling water and 2 tablespoons rum extract

  4. Slice the cooled layers in half

  5. For the first 3 layers, moisten with syrup then spread evenly with 1/3 jam, 1/3 ricotta mixture.

  6. Frost final layer and sides with the topping

  7. (2 cups heavy cream whipped with 2 cups confectioner’s sugar

  8. Refrigerate
