Molded Cranberry Relish

Ingredients

  • 1 package cranberries
  • 1 1/2 cups sugar
  • 1 1/2 cups dry red wine
  • water
  • 1 envelope unflavored gelatin
  • 6 ounces lemon Jello
  • 1 1/2 cups diced celery
  • 3/4 cup chopped walnuts

Directions

  1. In 3 quart saucepan, combine cranberries, sugar, wine and 1/2 cup water

  2. Sprinkle on unflavored gelatin.

  3. Over medium heat, heat to boiling, stirring constantly

  4. Stir in Jello and remove from heat

  5. Stir in 1 cup cold water

  6. Refrigerate until mixture mounds slightly when dropped from spoon (about 2 hours)

  7. Gently fold in celery and walnuts

  8. Pour into an 8 cup mold, cover and let set about 3 1/2 hours.
