Ingredients
- 1 (32 ounce) package frozen hash brown potatoes, thawed
- 1 medium onion, chopped
- 1/2 cup chopped green pepper
- 1 (10 1/2 ounce) can cream of potato soup
- 1 (10 1/2 ounce) can cream of celery soup
- 1 (8 ounce) carton sour cream
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup shredded monterey jack cheese
Directions

Combine all ingredients except cheese; stir well.

Spoon potato mixture into a greased shallow 2-quart casserole.

Bake at 325 degrees for 1 hour and 15 minutes.

Sprinkle with cheese, and bake an additional 15 minutes.
