Greek Shrimp

Ingredients

  • Cooking Spray
  • 2 tablespoons olive oil
  • 1 small onion, minced
  • 1 clove garlic minced
  • 3 cups tomatoes, coarsely chopped
  • 12 ounces tomato paste
  • 1/4 cup dry white wine
  • 2 tablespoons parsley, chopped
  • 1 teaspoon crushed oregano
  • 1 1/2 pound medium shrimp, peeled and deveined
  • 2 to 4 ounces Feta cheese, crumbled
  • Fresh ground pepper, to taste

Directions

  1. Lightly spray slow cooker with cooking spray

  2. Saute the onion and garlic in the olive oil, for approximately five minutes or until onion is soft

  3. Combine all ingredients except the oregano, shrimp and Feta in slow cooker

  4. Cover and cook on low for 6-8 hours

  5. Turn heat to high and add oregano and shrimp

  6. Cook about 15 minutes until shrimp turns pink

  7. Stir in Feta cheese and add freshly ground pepper to taste and serve immediately
