Jarlsberg Lite Omelet

Ingredients

  • 1/2 cup sliced mushrooms
  • 1/3 cup sliced green onions
  • 2 tablespoons margarine
  • 6 egg whites
  • 6 tablespoons cold water
  • 2 cups shredded Jarlsberg Lite
  • 1/2 cup lowfat ham, diced
  • Parsley sprigs for garnish

Directions

  1. In large skillet saute mushrooms and green onionsin 1 tbs margarine until onions are soft. Remove from pan and set aside.

  2. In bowl beat egg whites, water and salt.

  3. In skillet melt 1 tbs margarine and pour egg mixture into skillet. Cook until it begins to set. Lift to allow uncooked eggs to run underneath. Add mushrooms, green onions 1 1/2 cups shredded Jarlsbreg Lite cheese and ham. Cover and cook 1 to 2 minutes until cheese is melted.

  4. Serve folded over, garnish with 1/2 cups Jarlsberg Lite cheese and parsley sprigs.
