Home-Style Meatloaf

Ingredients
- 3/4 cup uncooked instant oatmeal
- 1/2 cup fat free milk
- 1/2 cup reduced sodium chicken broth
- 1/2 cup shredded carrots
- 1/4 cup shredded onion
- 1 large egg, lightly beaten
- 3 tablespoons chopped fresh parsley
- 2 garlic cloves, minced
- 2 teaspoons Dijon mustard
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 3/4 lb. ground turkey breast
- 3/4 lean ground beef

Preheat the oven to 350 F. Line a 5×9 loaf pan with foil.

Combine the oatmeal, milk, broth, carrots, onion, egg, parsley, garlic, mustard,salt and pepper in a large bowl. Add the turkey mixture to the oatmeal mixture; mix just until blended.

Spoon the mixture into the pan and smooth top. Bake until a thermometer reads 165 F, about 1 hour. Let stand 10 minutes. Remove meatloaf from pan. Serve.
