Home-Style Meatloaf

Ingredients

  • 3/4 cup uncooked instant oatmeal
  • 1/2 cup fat free milk
  • 1/2 cup reduced sodium chicken broth
  • 1/2 cup shredded carrots
  • 1/4 cup shredded onion
  • 1 large egg, lightly beaten
  • 3 tablespoons chopped fresh parsley
  • 2 garlic cloves, minced
  • 2 teaspoons Dijon mustard
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 lb. ground turkey breast
  • 3/4 lean ground beef

Directions

  1. Preheat the oven to 350 F. Line a 5×9 loaf pan with foil.

  2. Combine the oatmeal, milk, broth, carrots, onion, egg, parsley, garlic, mustard,salt and pepper in a large bowl. Add the turkey mixture to the oatmeal mixture; mix just until blended.

  3. Spoon the mixture into the pan and smooth top. Bake until a thermometer reads 165 F, about 1 hour. Let stand 10 minutes. Remove meatloaf from pan. Serve.
