Boston Restaurant Meat Sauce

Ingredients

  • 5 cloves garlic
  • 5 stalks celery
  • 1 carrot
  • 1 large onion
  • 3/4 tablespoon oregano
  • 3/4 tablespoon black pepper
  • 1/4 tablespoon cayenne pepper
  • 3 pounds ground beef
  • 4 tablespoons olive oil
  • 1/2 teaspoon baking soda
  • One gallon tomato paste

Directions

  1. Process the vegetables well

  2. In a large pot, saute the vegetables and add the ground beef, brown thoroughly

  3. Add the tomato paste and stir in 1/2 gallon water.

  4. Add a small handful of salt.

  5. Cook for 2 to 2 1/2 hours, stirring occasionally

  6. 10 minutes before its done, add 1/2 teaspoon baking soda and mix in thouroughly
